Yields 10 people

For the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Cocktail (yields 850ml, serving 10)

400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

Making the Citrus Syrup: Place all the ingredients inside a saucepan, heat until it reaches a light boil, mixing so the sugar melts. After that, turn off the heat allowing it to reach room temperature completely. Pour into a clean bottle, seal and store chilled, it can be stored for around a month.

Preparing the Premix: Mix all the liquids in a sizeable container, allow it to infuse for one hour, then filter it preferably using muslin, to ensure it's perfectly clear.

To serve: Pour 85ml from the batch mix to a stirring glass filled with ice, gently stirring carefully for about 60 seconds until cold. Strain into a chilled martini glass or a similar vessel, garnish with some cranberries and complete it with a quick spritz with the mandarin essence over the drink.
